Summary: | The food diversification can be used as a solution to solve rice dependence by
using corn as substitute of rice. This research aims to develop the rice analog from corn
within the best concept development as substitute of rice.
Product development used value engineering method with product concepts
based on material ingredients made from 100% corn and a mixture of corn flour and
maizena with combination 90%:10%, 80%:20% and 70%:30%.
The best development concept with the highest value was a mixture of 90%
corn flour and 10% maizena with the best shape similar like rice and has mellow
texture. |
