This research used alkaline-steeping method to isolate rice starch. In the end of this research, the protein content of the product was analyzed as the success parameter of this method. The optimum conditions of rice starch production with alkaline-steeping method are 5 hours steeping in 0,4 % NaOH solution with continuous stirring and neutralization with wter. Analysis results show that alkaline-steeping method without continuous stirring is only able to reduce protein content to 4 % meanwhile alkaline-steeping method with continuous stirring is able to reduce protein content to 0,14 %. text
