Indonesia has been imported rice starch to fulfill the demands. Research about rice starch production is still done to produce high purity rice starch economically. One of rice starch production method is alkaline-steeping method.<p> <br /> <br /> <br /> The main objective of this research is to build the skill to produce starch from standard process to then investigate and optimalize the factors that significantly influence rice starch production from rice flour. This research used alkaline-steeping method to isolate rice starch. In the end of this research, the protein content of the product was analyzed as the success parameter of this method. The optimum conditions of rice starch production with alkaline-steeping method are 5 hours steeping in 0,4 % NaOH solution with continuous stirring and neutralization with wter. Analysis results show that alkaline-steeping method without continuous stirring is only able to reduce protein content to 4 % meanwhile alkaline-steeping method with continuous stirring is able to reduce protein content to 0,14 %. text
