The water content in mustard make activity enzymatic and microorganisms increased so cause decay. Besides the period of treatment post harvest less right could make quality mustard green decreased. So that on moment product will marketed sometimes easy experience rottenness. Then from that required method post strive for vegetable crops no easy experience rottenness, one only with edible coating, ie dyeing fruit or vegetable to in solution preservative naturally. On research The edible coating is given on mustard use aloevera and propolis and then saved in temperature space. Aloevera and propolis is antibacterial and antioxidants. Research aim is for look effectiveness use coating material on mustard measured in some parameters such as shrinkage weight mass, water content, content chlorophyll, vitamin C, and physical parameters others as color, damage leaves, state rod, After do observation for 9 days value shrinkage measurable weight on treatment control, aloevera, propolis and aloevera-propolis is 50.81%, 43.57%, 49.17%, 40.81%. While water content and The highest concentration of vitamin C there is on treatment mix aloevera and propolis5% ie 86.95% and 79.69%, while levels chlorophyll the highest there is on treatment propolis ie 14.27%. Through results research this could concluded that coating using mix aloevera and propolis 5% have influence to the quality parameters mustard Green saved in temperature room for 9 days. text
