This study used food waste from three types of restaurant (Nasi Padang, Fast Bake, Warung Mitha) in Gelap Nyawang Street, Bandung City to assess the type of residual waste which foods are best used as a media for the larvae of H. illucens using bucket as a bioconversion, respectively 3 repetitions. One kilogram of food waste (70% moisture content) was given to each bucket and be around an average ±500 of larvae 2 days old.. Bioconversion process lasted in 25 days. Utilization of food waste from restaurants used H. illucens produced larvae with a protein content up to 42.7% with efficiency waste reduction of up to 91%. Residue of bioconversion potentially be can used as compost. There was the implementation of clean technologies from restaurant through 7R of production strategy (Refine, Rethink, Reduce, Reuse, Recycle, Recovery and Retrieve to energy) because it can help minimize the amount of waste to be discharged into the environment to waste disposal costs up to 75% and can produce output that was very profitable. text
