Starch plays an important role in food industry, such as thickening agent, filling agent, and chewing agent. Starch isolated from cassava has been produced commerciall, known as tapioka flour. However, this production has its disadvantages, namely the large usage of water as the solvent that can reach ten times of its feed. Therefore, in this research, the cassava is given a pre-treatment of fermentation, which aims to reduce the solvent volume usage during starch isolation. <br /> <br /> In this research, starch isolation is done using the sedimentation method based on the literature from Nand, et. al. (2008) by replacing the raw material from cassava to Fercaf. In this method, steeping process, which is the most important step in the isolation process, is done by varying the solven pH as well as varying the mass ratio between Fercaf and the solvent. Solvent pH variation is done with pH 7 and pH 10, while the mass ratio between Fercaf and the solvent is done on 1:5, 1:6, and 1:7 variation. The isolated starch will further be characterized which include moisture content, starch purity, swelling power, solubility, whiteness index, gel strength, as well as granule analysis using the scanning electron microscope (SEM). <br /> <br /> The research produced isolated starches with yield value between 29,5 – 41,9% with starch purity between 90,91 – 92,94%. Based on the yield and starch purity, the optimum starch isolation from Fercaf is found to use the solvent using pH 7 with mass ratio between Fercaf and solven of 1:6. The variation of solvent pH gives a significant effect on moisture content and whiteness index of the isolated starch. The mass ratio between Fercaf and solvent variation gives a significant effect on moisture content. Besides, swelling power and solubility is highly affected with temperature. text |
