Summary:Allicin is natural active compound consisted in single bulb garlic, also the most potential as gastric ulcer drug. Recently, gastric ulcer drug consisting Allicin with commercial label Garlic Sole is available in the market. Unfortunately, Garlic Sole particles was not encapsulated causing uncontrollable release rate of Allicin. The Allicin release rate could be optimized by applying nanoencapsulation method. It is imperative to encapsulate Allicin with chitosan, alginate, and nanocellulose. In this research, nanoencapsulation processes start with the preparation of cassava stem, cellulose isolation and hydrolysis from the cassava stem, Allicin extraction, and ended by the synthesis of Allicin nanocapsule. Characterization of the functional groups is done by FTIR (Fourier Transform Infrared Spectrophotometry), zeta potential using zetasizer nano, morphology using TEM (Transmission Electron Microscopy), and release rate using UV-ViS (Ultraviolet Visible Spectroscopy). <br /> <br /> <br /> The characterization results show nanocellulose taken from cassava stem has successfully made. Chitosan – alginate – Allicin – nanocellulose have synthesized successfully producing nanocapsule. Nanocellulose has irregularly shaped fiber with a diameter of 33,17 + 21,02 nm, while Allicin nanocapsule has round shape with quite homogeneous diameter of 39,10 + 3,22 nm. Chitosan in Allicin nanocapsule has a thickness of 3,47 + 0,17 nm, while calcium alginate has a thickness of 4,57 + 0,38 nm. The small amount of standard deviation of both thickness show the average of Allicin release rate in nanocapsule is quite representative. The release rate characterization shows the lower the pH of HCl, the higher the Allicin release rate. The release duration of Allicin in nanocapsule is more than 120 minutes with optimum release rate on pH 2,5. For comparison, the duration of release rate of Allicin in Garlic Sole is less than 100 minutes. Therefore, Allicin nanocapsule is more potential as gastric ulcer drug than Garlic Sole.
