One of important comodities in Indonesia is bananas. Edible banana (Musa sp.) is a tropical fruit originated from Southeast Asia, which is widely consumed by people around the world because their nutritional values. Currently, only 200 banana cultivars have been identified from around thousand that have been predicted. Based on data from Indonesia Ministry Agriculture, banana production is spread from West to East Indonesia and Indonesia is one of the largest banana producers in the world. One of the important factor in banana production is fruit quality, therefore, postharvest analysis using cutting edge technology such as remote sensing with spectral reflectance is needed to be developed. There is potential use of near-infrared (NIR) applications as a non-destructive method to estimate Total Soluble Solid (TSS) from bananas fruit as one of parameter in fruit ripening. Cavendish bananas fruits were used to study fruit ripening for 7 consecutive days. Spectral data was taken using the hyperspectral spectrometer as well as Total Soluble Solid(TSS). In this study obtained results of changes in spectral values, colors, starch content and TSS values. TSS value during the fruit ripening process ranges from 5.8 ° Brix - 15.2 ° Brix and the TSS value correlates with changes in spectral values during the fruit ripening process. This study showed that the spectral reflectance can be used as one of parameters to estimate sugar content of banana during fruit ripening. <br /> <p align="justify"> text
