Summary:Cocoa is a plant whose beans are used in industry production process, so that another part of the cocoa beans in addition would be a waste. In processing of cocoa beans will be generated waste such pulp of cocoa beans (cocoa sweatings) which is often termed as the pulp of cocoa from fermentation process. The content of the waste from the pulp of cocoa it contains high value of sugar and organic, it because the process of cocoa sweatings is anaerob conditions. So that, this study was conducted in anaerobic conditions, with the formation of ethanol parameters as one of the key successes of the degradation of anaerobic process. Ethanol is one of the by product which is used for utilization. According to Wang et.all (1979) from their research, a lot of metal cofactors involved in the formation of the enzyme, but it is unknown exactly which one is very influential to the formation of ethanol. Thus, this research was conducted with an experimental screening in laboraotry scale with using statistic 2n factorial analysis to determine the influence of Fe, Mn and Ni metals cofactors in the formation of ethanol from anaerobic process in cocoa pulp. This research is conducted by using Circulating Bed Reactor (CBR). CBR is operated in batch for 72 hours. The efficiency from anaerobic process resulting in COD removal eficiency on the processing of liquid waste of cocoa pulp which can be reached into 65-80%. In this study,from statistic 2n factorial analysi, the most influential metal on forming process of ethanol is Femetal addition, combination of Fe and Ni metals addition, and combination of Fe, Mn and Ni metals addition. The increasing rate of formation of ethanol is nearly reached about 60% increasing of ethanol which obtained highest value ethanol for 72 hours with concentration of ethanolis reach 11,224.6 mg /L.
