Description
Summary:The development of culinary tourism is very rapid in Indonesia, this is marked by the incessant publication that can be seen in print media, television, and the internet. One of the emerging culinary industries is cafes and restaurants that provide facilities for visitors not just to eat but can spend time working or socializing. The high enthusiasm of Indonesian people for transformation of a dining place that is able to provide communal space to chat, gather, and work becomes the background for emergence of the idea of land use into an arcade that accommodates variety of cafes and restaurants with various types of food and attractive architectural designs so Bandung can be realized as a highly competitive tourist destination. Thus the idea of developing Gourmet Alley emerged, an area with a commercial function in the form of culinary arcade. Further civil design is required to realize this culinary arcade building project. The design process of this civil building needs to be done in detail in order to achieve its function optimally. In this final project discussed the design of water resources aspect in Gourmet Alley project located on between Jl. Dayang Sumbi and Sumur Bandung, Bandung City. This building has 3 floors that functioned as culinary arcade which accommodate various cafes and restaurants, also communal space as gathering place. In addition to culinary arcade and communal space functions, the building also has 1 basement floor which is planned as a parking lot. There are two main scope of work of the water resources aspect that is designed, namely drainage network design, also water supply design and rain water treatment system, plus one additional work scope namely dewatering excavation design because of rain. All civil designs on the aspect of water resources are initiated by hydrological analysis to obtain reliable discharge, flood discharge, and flood level based on rainfall data processing and topographic data. The reliable discharge from the hydrological analysis is then used to design the RWH (Rain Water Harvesting) tank. Meanwhile, flood discharge is used to design drainage, flood level, and dewatering pump design. In drainage network design, the designed and analyzed spaces are roof drainage, building yard drainage, and urban drainage capacity analysis. The drainage network design begins by drawing a drainage network layout taking into consideration the existing spatial aspects. Then, followed by the calculation of rain runoff by using rational methods. After rainfall and water catchment area is available, it can be done to dimensioning the components of the drainage network. Then, continued with the existing urban drainage analysis. In the design of water supply and RWH, the scope that is designed and analyzed is the estimation of water demand, the determination of PDAM supply, the design of rain water catchment, the design of Water Tank, pressure tank, and the design of pipes and water supply pumps. The design of clean water supply and RWH begins with estimating the needs of clean water and rainwater supply. After the need for clean water and the supply of rain is obtained, the determination of water supply from the PDAM is made. The rainwater supply is only enough to meet 1,50% of Gourmet Alley's water needs. Although rainwater supply that can be used for water supply is small enough, Rain Water Harvesting (RWH) system from Gourmet Alley Building must still exist based on Article 3 of Indonesia’s Minister of Environmental Regulation No. 12 in 2009. Then, layout of clean water supply is made by considering spatial aspect. After that, Water Tank, pressure tank, clean water pipes, and pumps are required to supply clean water dimensioning can be done.
