Lipolysis is hydrolysis of oil using lipase. Lipolysis is carried out in a recycling reactor in the type of a circulating reactor. Lipolysis was chosen because it can be carried out at both room temperature and pressure and does not require large energy that make it cheaper. This study aims to determine the ability of lipase recycling in the form of frangipani gum, the effectiveness of the recycled gum, and the kinetics of the lipolysis reaction. Variations from this research are variations on speed of stirring and the ratio of buffer and oil to determine the optimum variation of lipolysis. The results of this study indicate that the optimum variation is obtained at 790 rpm with a buffer and oil ratio of 24%. Frangipani gum that has been used can also be recycled with the effectiveness of the sap up to 100% or have the exact same performance as the new one.
