However, the quality and quantity of this purple sweet potato cultivation still need to be improved. One of the solution that can be done to improve the yield and quality of purple sweet potatoes is by providing organic fertilizer and the righ application time. The aim of this research is to determine the effect of organic fertilizers, application time of fertilizer, and both interaction to amount of anthocyanins, flavonoids, and antioxidant activity of purple sweet potato produced. Treatments used were combination of organic fertilizers (goat manure fertilizer, leaves compost fertilizer, bokashi, and vermicompost) and application time (day of planting, 30 days and 15 days in prior of planting). Total of 12 treatments with three replication conducted on randomized block design with 2 factorial. Analysis of Variance (ANOVA) on 5% level intended to test treatment effect, meanwhile difference between mean values based on DMRT 5%. The best treatment is 15 days before planting with bokashi fertilizer that produces anthocyanin and flavonoid values of 0.137 mg 100 g-1 and 0.298 mg 100 g-1. The types of organic fertilizer has a significant influence on the measurement of the values of lightness (L) on the sweet potato flesh color. Goat manure fertilizer produces sweet potato flesh color with 34.38 lightness (L) value. Antioxidant activity with the highest average value is the treatment of leaves compost by 63.89%, and the application time of 30 days in prior of planting by 50.12%. text
