Every monomer of fructose linked by ?(2->1) fructosyl-fructose made inulin resistant to mammal’s digestive enzymes. However, it could be fermented by bacteria called bifidobacter became into short chain of fatty acid in colon, so inulin was called prebiotic. The objective of this study was obtained optimum methode of inulin isolation (extraction and precipitation) from dahlia tuber (Dahlia pinnata Cav.) for increasing of inulin yield rendemen. Optimation of extraction method have did by adjusting of solvent and simplicia in 1:8, 1:10, and 1:12 (w:v) and boiled time at 30 minutes and 60 minutes. Optimation on precipitation have did by adjusting of ethanol amount about 30, 40, and 50% to filtrate with 70% and 98% concentration. Optimum conditon was obtained by yield of rendemen and characteristics of inulin such as physical appearance, water content, optic rotation, density, and melting point. Results the physical appearance of inulin is brownish white with the highest of rendemen about 10,56 gr (44,24%) and characteristics such as the average of water content about 11,67%, the average optic rotation of 1 mg/ml solution -0,024, the average density of 1% solution 1,003 and the average of melting point in range 172,6-174,5 0 C, and the optimum condition of exraction was obtained in simplicia and solvent ratio about 1:10, boiled time during 30 minutes. Moreover, the optimum condition of precipitation was obtained amount of ethanol at 40% of filtrate with 98% concentration. text
