Summary: | Banana fruits are horticultural product that can’t be stored for a long time due to
their rapidly decay and highly perishable. Coating application is one of
technology that is used for extending the shelf life of Ambon Putih bananas. In
this study aloevera gel, a polysaccharide was used as coating material that can
reduce the respiration and limit the absorption of moisture and gases. The active
compound derived from binahong leaf extract was added to the coating material.
The effect of aloevera gel and the addition of binahong leaves extract was studied
on ripening phase, weight loss, and total soluble solids from Ambon Putih
bananas.
Aloevera gel concentrations used are 50% and 100%. The concentration of
binahong leaves extract added is 5% and 10%. The results show that the coated
banana has a longer ripening phase so that it can delay the senescence phase
compared to uncoated bananas. There is an emphasis on CO2 production during
the maturation phase that accordance with the nature of the coating material
which belongs to the hydrocolloid category. In addition to suppressing CO2
production, other hydrocolloid properties is not good enough to hold water
vapor.Aloevera cannot resist the weight loss of bananas, but with the addition of
