Summary:<b>Abstract: <p align=\"justify\"> <br /> Production of Agricus bisporus (Lange) Imbach and Agaricus bitorquis (Quel.) Sacc. biomass as flavouring agent in palm oil industrial waste and compost extract media. <p align=\"justify\"> <br /> <br /> An investigation on the production of A. bisporus and A. bitorquis mycelia as flavouring agent had been conducted using palm oil industrial waste and compost extract medium in submerged cultures. Heavy metals present in mycelium were detected by using Atomic Absorbtion Spektrofotometri (AAS). The best growth condition for both fungi was carried out in shaking flasks. Media concentrations, number of inokulum and initial pH media were optimized in fermentation process. The highest mycelial dry weight was gained from A. bisporus grown in 5% (v/v) waste, 15% (v/v) inoculum and initial pH of 5,0, it was 2,93 g after 17 days incubation time. A. bitorquis gave maximum dry weight of 2,67 g after 12 days incubation. Compost extract medium of 2,5% (v/v), 15% v/v inoculum and initial pH of 5,0 gave the highest mycelial dry weight of 2,43 g A. bisporus after 17 days incubation and 2,30 g A. bitorquis after 12 days incubation. Mycelial dry weight of A. bisporus and A. bitorquis at pH of 5,5 were 2,50 g and 2,37 g respectively, they were non significantly different from the former one. Next fermentation was in a fermentor using waste medium 5% (v/v), inoculated with 15% A. bisporus and pH 5,0. The result has more mycelial dry weight and faster incubation time, it was 4,53 g in 10 days. The flavor of mycelium in shaking flasks was better than in fermentor and both are less than fruiting bodies flavor. The Zn concentration in mycelia was lower while Mn and Fe were higher, according to standard quality for drinking water. There were no heavy metals of Cr, Cd, Cu, Co, Ni and Pb found in both fungi mycelia.<p align=\"justify\"> <br />
