Based on the process, black tea is divided into fifteen grades. Nowadays grouping class of black tea was not based on chemical content, but based on density, size, and colour of tea. Because of that, it was needed to determine chemical content in fifteen grades of black tea. The aim of this research was to determine total flavanone and flavanonol from fifteen grades of black tea. Samples of fifteen grade black tea were extracted with fresh boiling water. The flavanone and flavanonol contents were determined by Chang method using 2,4 dinitrophenylhydrazine as a reagent. The color intensity of samples were measured in ultraviolet-visible spectrophotometer at a maximum wavelength of 495 nm. Total flavanone and flavanonol were calculated as naringin. Based on the experiment, the calibration curve of naringin had the equation y = 0,278x –0,271. Total flavanones and flavanonol fifteen grade of black tea quality were ranged from 7,27 ± 0,15% to 13,27 ± 0,67%. Total flavanone and flavanonol in first class of black tea were BT I (13,27 ± 0,67%), BOPF (12,86 ± 0,19%), BOP (10,85 ± 0,08%), Dust I (10,59 ± 0,10%), BP I (11,01 ± 0,21%), and PF I (11,67 ± 0,33%). Total flavanone and flavanonol in second class of black tea were PF II (10,43 ± 0,16%), BT II (9,96 ± 0,15%), Dust II (9,55 ± 0,12%) and BP II (8,66 ± 0,20%). Total flavanone and flavanonol in third class of black tea were Dust III (7,27 ± 0,15%), PF III (8,38 ± 0,09%), BM (7,84 ± 0,09%), BBL (8,65 ± 0,23%), and BTL (9,79 ± 0,20%). Total flavanone and flavanonol of fifteen grade of black tea ranged from 7,27 ± 0,15% (Dust III) to 13,27 ± 0,67% (BT I). text
