In addition, the powder form have advantages to facilitate its storage, distribution, standardization of active substances and can improve its stability. The objective of this research is to study the effect of maltodextrin addition for microcapsules formation related to roselle flower calyx extract powder characterized by using spray drying method. Expected outcomes of this research was dry extract in the form of microcapsules hygroscopicity and stickiness is better physical stability. Extracts produced and standardized based on Indonesian Herbal Pharmacopoeia (IHP). Research was carried out by adding the extract solution into maltodextrin solution in three concentration ratio of 1: 1 (R1); 1: 2 (R2); and 1: 4 (R3) as a feed solution with a total solids content of 10% by weight of the total encapsulation solution. Then, microencapsulated by spraydrying method with 110-115?C inlet and 99-104?C outlet temperature, and the feed solution flow rate of 200 mL/hour. Rosella flower calyx methanolic extract was obtained yield of 30,88% with corresponding characteristics the standardized extract at IHP. Microcapsules successfully obtained from third ratio with had characteristic morphological structures such as spheric and amorphous-crystalline form. The average particle size decreased with the addition of maltodextrin. DSC thermogram profile shows the profile of the third microcapsule association between extract and maltodextrin as well as an increase in the temperature of the glass transition. The addition of maltodextrin in microcapsules R1, R2, and R3 can reduce the hygroscopicity of extracts and increase solubility in water and moisture content. Spray drying process occurs efficiently in powder R2 with the encapsulation efficiency of 97.73% and product recovery of 74.05%. All powder microcapsules have residual solvent <1% so it be safe. text
