Summary:Bilimbi is one of the plants that grew well in Indonesia. Bilimbi is a plant with several suggested medicinal properties. Besides, bilimbi fruits are commonly consumed by people in daily life. One of the largest compounds in bilimbi is oxalate. Excessive consumption of Bilimbi fruits can increase oxalate serum level and accumulation of calcium oxalate crystals in the renal tubules which can cause health problems such as kidney disease. The objective of this research was to determine the recommendation for reducing oxalate in bilimbi fruits at difference maturity stages. Oxalate levels in bilimbi fruits measured by HPLC showed results oxalate levels in bilimbi young fruits ranged between 9,33-10,32 mg/g, while oxalate levels in bilimbi ripe fruits ranged between 8,57-9,82 mg/g. Immersion of bilimbi extract use lime water which is done qualitatively shown white precipitation in all maturity stages. Largest white precipitation is shown in bilimbi fruits old maturity stage.
