Summary: | Nowadays there are plenty of people with impaired absorption of fat nutrients so a solution to help them are needed. As the development of technology, the problems with fat are solved with the development of structured lipid which is a modified triglyceride to achieve a specific function. One of the structured lipids that suitable for overcoming this problem is the one which has a composition of medium chain fatty acid and long unsaturated chain fatty acid (MLCT). The fatty acid on this MLCT-type can be absorbed quickly into energy, reducing the possibility of accumulating body fat and helping fat digestibility.
Structured lipids can be produced using an interesterification reaction which is modifying the content or characteristic of fat and oil. In this study, a literature study is conducted with a normative and descriptive approach to observe the production of structured lipids by interesterification from published literature, so the effect of interesterification reaction parameters to the products through in-depth studies and studying the development trends of structured lipids interersterification research through scientometric analysis can be determined. This literature study shown that type of interesterification have affected by its operation condition such as time, temperature, or type of catalyst/enzyme used. Raw material is the most crucial factor of interesterification so local resources with rich MLCT composition is highly potential for future studies. To produce MLCT in future studies, directed interesterification or enzimatic interesterification continued with purification can be used to conduct more specific products. Optimization of the best operational condition and comparative analysis of structured lipid produced from each interesterification type can also be conducted.
