Summary:Lemon peel (Citrus limon) can be used as an edible coating because it has antioxidant and antimicrobial properties. The application of this material depends on the method of treatment. Research has been conducted to determine the effective coating method of lemon peel extract edible coating to extend the shelf life of Cavendish bananas (Musa acuminata) stored at room temperature and hot temperatures. The application of edible coating with lemon peel extract concentrated 25%. The coating method uses glazing, dipping, and spraying. Weight loss, degree of acidity, sugar content, hardness, microbial contamination, color and organoleptic changes were observed on days 0, 2, 4, 6, and 8. The results showed that coating treatment with 25% lemon peel extract was able to help maintain banana quality. during storage. The best coating is the glazing method, which is applying a banana using a brush to cover the surface evenly. This result is shown by a high score on organoleptic assessment and is able to maintain quality, especially on microbial contamination and color changes.
