Summary:Food waste becomes one of the global issues. Increasing in food waste generation can cause various problmes ranging from environment, social, and economy. Cost incured to handle the effects of food waste reach 2.6 trillion/year. Food waste occurs in all stages of food supply chain from the production stage to consumer. Household level is known as the highest contributor in all stage of food supply chain. Consumer’s behavior in food handling is considered as one of the problems which can affect food waste generation. However, consumer’s behavior can be driven by consumer’s understanding and perception related to food waste. Food waste behavior not only affected by single variable, meanwhile there are a lot of factors involved in it. The aim of this study is to identify various factors that affect food waste generation and factors affect community to reduce food waste on the household level in Bandung. There are 2 conceptual model built through literature review. Food waste behavior model is built to understand factors that affect the amount of food waste. Self-reported food waste is used to predict the amount of food waste. Pshycological factors which is consisted of intention, environment concern, financial concern, and social norm are combined with consumer’s behavior related to food provisioning to understand food waste behavior. Food-related routines consists of planning, shopping, storing, cooking, eating, managing leftovers, and managing food waste. However, food waste reduction model which is studied consist of sorting and composting activity. Independent variables that will be identified are information from mass media, education and training, environmental cadre, and waste bank. Furthermore, socio-demography factors that consists of age, education, income/expenditure, number of family members, and household composition is also added to both conceptual model. The intended respondents are people who responsible for household food provisioning. Survey through online questionnaire is used to collect the data. Pretesting is conducted through 15 respondents to ensure there is no ambiguity instruction or word order. Besides, validity and reliability is conducted through 37 respondents to ensure the measurement instrument is valid an reliable before main study is carried out. Moreover, data disribution was conducted to collect data for main study. Data collected were 426 respondents. After removing outliers, the remain data were 406 respondents. Food waste behavior model was analyzed by partial least squares-structural equation modeling by the helped of SmartPLS 3. Result shows that daily food provisioning such as shopping and eating affects food waste generation. Values such as environmental concern and social norms also have effect on food waste. Furthermore, efforts to reduce food waste was analyzed using logistic regression analysis by the helped of SPSS 26. Variable selection was conducted through backward elimination method and it was started by univariable analysis. Based on the result, food sorting activity is affected by level of knowledge related to sorting, information from mass media, education and training, age, and employment. Meanwhile, composting activity is affected by level of knowledge related to compost, environmental cadre existence, and age. Willingness to reduce food waste was considered in the questionnaire. Result shows that respondents have high level of willingnes to sort, willingness to compost, and willingness to distribute food waste. By understanding important predictor in food waste behavior and predictor in community participation in food waste reduction at household level, it can be used as consideration for developing strategies for preventing and reducing food waste at household sector in the future
