One method to improve the quality and quantity of spearmint oil is via lignocellulose biodegradation using Aspergillus awamori prior to Soxhlet extraction. The quality and quantity of spearmint oil recovery can be analyzed from several aspects such as the spearmint oil composition and lignocellulose content in the leaves. In this study, fermentation was carried out 0, 3, 6, and 9 days. The data obtained in this research includes lignocellulose content (%) in spearmint leaves before and after fermentation, spearmint oil yield (g / g dry weight) prior to fermentation and extraction time, and composition of spearmint oil. The research was conducted with two replications. The highest yield of spearmint oil was obtained after 9th day of fermentation, 451% higher than the control. As spearmint oil yield is increasing, it will be followed by a decrease in lignin, cellulose, and hemicellulose content. The highest decrease of lignin and cellulose content was found after 9th day of fermentation, 62.7% and 49.1% lowest decrease than the control, respectively. However, the lowest decrease in hemicellulose content was recorded on the 6th day fermentation with (34.38%) as compared to the control. The composition of spearmint oil was influenced by drying, extraction and fermentation conditions. The diffusion rate coefficient value of spearmint oil with lignocellulose biodegradation was also determined as 3.64 x 10-11 cm2/s. text
