In order to overcome this problem, it is necessary to develop storage techniques that can delay the ripening of bananas. In this study, an analysis was conducted on the maturation of cavendish bananas (Musa acuminata) stored inside a Food Storage Chamber (FSC) with titanium dioxide (TiO2) plate doped with manganese (Mn) (large and small size) illuminated with a 3 Watt LED lamp. There were five observed treatments: K (outside FSC), DK (within small FSC), DB (within large FSC), TK (within large FSC with small TiO2-Mn plate), and TB (within large FSC with large TiO2-Mn plate). Parameters measured include fruit weight loss, ethylene production rate using Ethylene Spy sensor, dissolved sugar content using refractometer, chlorophyll and carotenoid content using spectrophotometer UV-Vis, respiration rate using Lutron GCH-2018 CO2 meter, and color index using ImageJ application. The results showed that respiration and ethylene production rate were lower than other treatments, particularly in TB, on the seventh day, namely 0,86 ppm/gr.hr and 1,1 ppm/gr.hr. Decreased production rate of ethylene lower the physiological activity which was observed such as in dissolved sugar content, weight loss, chlorophyll degradation, and carotenoid production, with successive values of 2,1°Brix; 6,1%; 13,3 mg/L; and 23,3 ?mol/L; so that the fruit can have a longer shelf life. Therefore, it can be concluded that the FSC equipped with TiO2-Mn plate can slow the ripening of the fruit. text
