The number of banana fruit production in Indonesia reached 7.2 million tons in 2018. To support the success of banana exports from Indonesia, it is necessary to maintain the quality of bananas. This treatment can be done with postharvest treatment. Postharvest treatments for bananas varies widely. One of them is irradiation, which has the ability to inactivate microbes and inhibit maturation at certain doses. This research was conducted to determine the effect of radiation at a dose of 0, 0.25 kGy, and 1.5 kGy on the ripeness of bananas and microbial growth and to determine the shelf life of these two parameters. Based on the tests conducted, a banana with a dose of 0.25 kGy has a safe shelf life of consumption up to the 21st day as a banana with a dose of 1.5 kGy. Different results were shown by bananas without irradiation. Based on this research, it can be seen that bananas irradiated 0.25 kGy and 1.5 kGy are able to withstand a shelf life of 14 days longer than bananas without irradiation. Control bananas had a preference for aroma, higher texture, the lowest rate of reduction in hardness and the lowest levels of total dissolved solids. text
