By extracton process, oil is extracted from the kernel by using n-hexane as solvent. The previous research showed that oil of saga utan contains unsaturated oleic acid (omega 9) and linoleic acid (omega 6) about 60 % w/w and other fatty acid (C>18) about 20-25 % w/w. <br /> <br /> Esterification of saga oil decreased acid value from 3,3 mg KOH/gr oil to 0,841 mg KOH/gr oil. Transesterification was applied to produce fatty acids methyl ester from triglycerides of saga utan. The tests of methyl-ester which is produced from transesterification showed that acid value below 1 mg KOH/gr oil, and saponification value 186,87 - 187,96 mg KOH/gr methyl-ester, while iodium value ranged 89,92 - 93,93 gr iod/100 gr methyl-ester. By fractionation process, saturated fatty acids which have high melting point was separated from methylesther of liquid fraction (methyl-esther of unsaturated fatty acid). Reconstitution oil of saga utan occurred in directed interesterification. The test of directed interesterification products showed that acid value was 0,587 mg KOH/gr oil, saponification value was 185,94 mg KOH/gr oil and iodium value was 134,41 gr iod/100 gr oil. <br /> <br /> <br /> From the test of products from all process that involved in this research, it can be concluded that reconstitution oil of saga utan was successfully done. <br /> . text
