Summary:Active packaging is a storage technology that is currently being developed with the aim of maintaining the quality of fresh products. The use of this technology is expected to extend the shelf life in order to support the distribution process in the long term. In this study, storage based on active packaging was carried out on avocados using KMnO4 as an ethylene scavenger, ascorbic acid as an oxygen scavenger on an inert zeolite stone media. The purpose of this study was to determine the best treatment variation for avocados based on chemical properties such as acidity (pH), total dissolved solids (oBrix) and organoleptic taste. The experimental design was carried out based on the Response Surface Methodology (RSM) Box-Behnken Design (BBD) in the Minitab program. The use of KMnO4 and ascorbic acid with zeolite stone media was proven to be able to maintain avocado quality for up to 12 days which if not treated could only last up to 5 days. In this study, the best treatment formulation was obtained during storage using 29.9% KMnO4 and 66.7% ascorbic acid on a new inert medium of 52.5 grams of zeolite.
