Summary:Garut regency is a potential citrus farming center with a contribution of 63% of citrus production in West Java. When harvested, siam oranges generally have a green or yellowish green color but most consumers prefer oranges with orange color compared to green oranges. One way to make orange has an orange color is by doing degreening process using ethepon accompanied by red LED light exposure. This study aims to find out the influence of ethepon concentration and get the best ethepon concentration accompanied by red LED light to the degrenning process of siam garut citrus fruit. The research was conducted in Wisma Sekar Tanjung, Caringin Village, Jatinangor on April 06 to April 19, 2021. The testing was conducted at the Indonesian Institute of Sciences (LIPI), Cigadung Village, Subang and in the Downstream Engineering Laboratory, Labtek 1A, Bandung Institute of Technology, Jatinangor Campus. This study uses a Randomized Block Design (RBD) method consisting of one factor in the form of ethylene concentration consisting of three levels, namely 0 ppm, 240 ppm, and 480 ppm. The results in this study are the change in orange color from green to yellowish orange which is characterized by increased value of Citrus Color Index (CCI), L*, a*, b* and color score as well as decrease in ºHue value. The more orange citrus is more favored the panelists and the ethepon concentration not effect on the quality of citrus fruits except at the value of hardness. The best concentration in degreening in this study was the ethepon concentration of 480 ppm accompanied by the provision of red LED light
