Summary:Abstract: Tofu industry is one of the primary industries that produces tofu products as its main production and produces tofu dregs as a by-product. This tofu dregs, if not handled properly, will have a negative impact on the environment, and the impact felt by the community around the factory in the form of an odor. Based on the characteristics of the tofu dregs produced, it turns out that the tofu dregs can still be used, either directly (re-use) or after going through the recycling process. Tofu waste can be recycled into biogas, compost or BSF maggot bioconversion media. In selecting the method of utilizing tofu waste, several criteria need to be considered in order to obtain the most suitable utilization method. The criteria that will be used in this research include economic, social, environmental and technical aspects. Determination of the method of utilizing tofu dregs is carried out using the Analytic Hierarchy Process (AHP) method which involves pairwise comparisons between criteria. In this study, pairwise comparisons were obtained from several stakeholders, including academics, practitioners and also tofu industry owners. The case study was conducted on one of the tofu industries "X" in Sidikalang, Dairi Regency. This study involved 9 respondents representing all stakeholders. Based on the data processing carried out, the utilization of tofu waste waste into BSF maggot bioconversion media became the utilization option with the highest weight at 0,49, followed by biogas at 0,28 and compost at 0,23. The economic potential generated by the utilization of tofu waste using the bioconversion method is Rp 44.652.980,00 each month.
