Summary:Abstract : <br /> <br /> <br /> <br /> Acrylamide, a carcinogenic contaminant in foods, has only a few chromophore and gives maximum absorbance at far-ultraviolet region. Acrylamide derivatitation with aniline sulphate is needed to obtain peak absorbance at longer wavelength and reduce analysis interferences. Acrylamide derivate gave maximum absorbance at longer wavelength than acrylamide. Acrylamide and aniline sulphate were reacted in water and under acidic condition at 40 C for hours. Product was extracted with dichlorometane and fractinated with classical column chromatography, using silica gel 60 as stationary phase and chloroform-methanol (9:1) as mobile phase. Isolate was characterized with ultraviolet spectrophotometry and infra red spectrophotometry. Isolate gave maximum ultraviolet absorbance at 253 nm, longer than acrylamide maximum wavelength, and absorbed infra red radiation at respectively 3405 cm -1, 1730 cm -1, 1168 cm -1, and 1504 cm -1which indicate the presence of amide group and aromatic ring. <br />
