Summary: | Glucose liquid is an excipient that been used in many industrial pharmacies. Taro has
potential as raw material in glucose liquid production because contain a lot of starch. This
research has purposed to make glucose liquid from taro by enzymatic hydrolysis by using
alpha amylase enzyme. Glucose syrup production started with gelatination, liquefaction,
saccharification and then purification. Product then analyzed comprise identification test,
Dextrose Equivalent determination, sulphate ash determination, loss on drying, and pH
test. Production of glucose liquid with substrate concentration 8% and 10% of enzyme
with 24 hours of time hydrolisis resulted product with 40% rendement with dextrose
equivalent 0.8 and total dry matter 40%. |
