Summary:Betung bamboo (Dendrocalamus asper) has the potential to replace products that use wood from tree trunks because the growth of bamboo reaches 60 cm/day and its physical properties are not much different from tree wood, but bamboo is easily attacked by pests and requires preservation. Metaxylem, phloem, and sclerenchyma are cells that make up the bundle of vessels, and parenchyma cells as the matrix. Each cell has a different structure so that differences in the anatomical characteristics of betung bamboo stems in the radial direction of the stem which are divided into an inner layer, middle layer, and outer layer will affect the absorption properties of preservatives in the form of liquid smoke in the cold soaking process. This study aims to determine the anatomical characteristics and properties of liquid smoke absorption in the inner, middle, and outer layers of betung bamboo stems. The research method consisted of sample preparation of betung bamboo stems, making liquid smoke, observing the anatomy of betung bamboo stems, cold immersion of samples with liquid smoke, weighing the weight of samples of betung bamboo stems, and data analysis. The results showed that the distribution of the vascular bundles in the inner layer was 0.95 vascular bundles/mm2, the middle layer was 1.27 vascular bundles/mm2, and the outer layer was 5.57 vascular bundles/mm2. The metaxylem lumen area of the inner layer is 36.47 mm2, the middle layer is 24.88 mm2, and the outer layer is 4.4 mm2. The percentage of parenchyma in the inner layer was 46.57%, the middle layer was 36.33%, and the outer layer was 34.68%. The 30% liquid smoke absorption capacity in the inner layer is 89.51%, the middle layer is 64%, and the outer layer is 32.58%, while the 30% liquid smoke absorption rate in the inner layer is 11.37 mg/hour, the middle layer is 11.33 mg/hour, and the outer layer 8.81 mg/hour. The anatomical characteristics of the betung bamboo stem simultaneously have a significant effect on absorption and absorption rate.
