INSTITUT TEKNOLOGI BANDUNG https://digilib.itb.ac.id/gdl/view/67296 Antioxidants are molecules that neutralize reactive oxygen species in the human body. For preservation purposes, some foods and beverages are contain tertiary butyl hydroquinone (TBHQ) antioxidants. Besides its benefits, TBHQ has a harmful impact on the body. Therefore, an appropriate method is needed to determine the TBHQ content in some product. The voltammetric method can be further developed for the study of the levels of a substance including the antioxidant TBHQ in the sample. Because, the voltammetric method can be modified to obtain a high level of sensitivity, fast response, and economical preparation costs. This research will focus on increasing the detection ability by working instruments. One of the carbon electrodes developed to detect antioxidants is a carbon paste electrode (EPK). On the surface of the EPK oxidation occurs at a relatively high potential and a suitable catalyst is needed to irreversibly increase the kinetics of the redox reaction between the electrode and the antioxidant analyte. In this study, a method was developed for voltammetric analysis of antioxidants using Reduced Graphene Oxide (rGO) modified EPK. The linear calibration curve was found in the concentration range of 7 ?M – 400 ?M with 7.33 ?M limit of detection. The electron transfer process on the surface of thr modified electrode was found to be diffusion controlled. Determination of TBHQ in margarine samples showed a good accuracy between 99.47 – 99.87%. text |
