The success of fermentation process is influenced by the ability of microbes to utilize carbon sources from plants. This study aimed to determine the effect of different duration in hydrothermal treatment (10, 15 and 20 min) on the structural components of polysaccharides in L. punctata and their subsequent effects on the fermentation process. Fermentation was carried out in a semi-solid system for manufacturing high probiotic silage products using Lactobacillus plantarum. The results showed that reduced lignin levels by 12.5%, cellulose 11.25%, hemicellulose 13.56% and starch 56.86% while increased glucose content by 772.8 ppm. Furthermore, hydrothermal treatment followed by fermentation process produced higher lactic acid 2415.47 ppm, protein 25.16% and bacterial growth 1.1 × 107 CFU / mL compared without hydrothermal treatment, this yield is in with SNI standards. So that the product produced can be used as a high probiotic based feed. text
