This research analyze the optimum condition of starch hydrolysis by ?-amylase from corn sprout.The parameters studied includes pH, temperature, time of reaction and substrate addition. Fuwa method is used for measuring starch remnant after hydrolysis. The Fuwa method measure the absorbance of starch solution which have been reacted with KI-I2 solution, which examined the result of this research at the wavelength 650 nm indicates that the maximum activity of ?-amylase occurs at pH 6,5, temperature 350C, at reaction incubation of 45 minute, and substrate concentration of 13,64 mg/ml. At this optimum condition, the unit activity of the enzyme is 8,805 mg/minute. text
