The aim of this study is to assess the sensory attributes of tempeh produced using modern production methods compared to traditional production methods while evaluating and examining the components of nutritional content and the consumer perceptions and acceptance of tempeh produced using the modern production method compared to the traditional method. This study research methodology was designed using a qualitative method with the main method of conducting interviews with experts and informants. Purposive sampling technique was used to select a total of 10 participants who have expertise and experience in the industry. After conducting the interview and analysing the data, this study shows that there has been a shift in production methods from traditional to modern in the Indonesian tempeh industry. text |
