Summary: | Cases of food poisoning does not only occur in Indonesia, but is prevalent in all parts of the world, caused mostly by the presence of pathogenic microbes in foods. Generally, pathogenic microbes come from animal materials such as eggs, milk, and meat, with milk being one of the food products that is often consumed by Indonesian people and is of greatest concern to its consumers. Milk pasteurization process is therefore carried out so that the milk is free from pathogenic microbes by heating it to a certain temperature with a certain time span. To achieve and maintain temperatures according to PMO standards, a control system is needed in the milk pasteurization process. Digital twin is one of the important aspects of the development of Industry 4.0 and allows for more accurate performance prediction and improved control system performance. In previous research, a control system design was carried out in the pasteurization process with various control strategies using a PID controller. In an effort to improve control performance by carrying out new control strategies and methods, this final project will design an intelligent control system for the HTST type pasteurization process using a miniature Armfield miniplant process with a control method using three loops combined with a digital twin-based ANFIS controller type. The control results using ANFIS give a better value than the PID controller. The control system using the ANFIS controller gives an RMSE value of 1,151 and with a PID control of 2,415.
