However, in-depth studies conducted by the FAO (2011, 2015) and Bappenas (2021) reveal that FLW has a significant negative impact on the environment, society, and economy, with data indicating that approximately one-third of global food production is wasted, contributing to substantial greenhouse gas emissions and causing considerable economic losses, including trillions of Rupiah in losses in Indonesia. This thesis focuses on consumer behavior as one of the main causes of FLW, highlighting the lack of information, awareness, and appreciation of the food chain and its dangers to the environment. It proposes a Mindful Eating education approach to the public, a practice that encourages individuals to become more aware, grateful, and make ethical and sustainable food consumption choices. This approach is strengthened by the development of the Food Hub concept as a center for information and sustainable food practices in urban centers, with the potential case study of the Kesawan area in Medan as an ideal location due to its history and culinary wealth, as well as the presence of the historic Warenhuis department store building. Through the design of the Warenhuis Food Hub, this initiative aims not only to address FLW issues locally but also to contribute to global solutions, promote a culture of sustainable local food, and serve as an inspirational model for other cities facing food security and environmental challenges. text
