However, this fruit is classified as a perishable horticultural commodity. One of the causes of fruit damage is the process of land transportation and longterm storage. Physical risks in the form of friction, collision and pressure during transportation are causes of mechanical damage that can trigger other damage in the form of chemical, physical and microbiological damage. Improved packaging can minimize damage to horticultural products during transportation. One important factor in packaging design is the pattern of product arrangement in the package. The application of a regular stacking pattern is used to minimize friction between fruits during the transportation process due to its compact structure and load more capacity in cardboard packaging. This study was conducted to determine the most effective stacking pattern in reducing damage during transportation and extending shelf life based on hedonic quality parameters, weight loss (%), damage (%), hardness (Kg/cm2), color (L* and °Hue), total soluble solids (% brix), total titratable acid (% acid), and sugar and acid ratio. This research design used a completely randomized design (CRD) followed by Tukey's further test at the 95% confidence level to determine the most effective treatment of fruit stacking pattern variations (bulk arrangement, face centred cubic, body centred cubic, and handle face cubic in cardboard packaging. Based on the results of the study, it was found that the treatment that has the most effective tendency in maintaining the quality of salak fruit during land transportation is the BA stacking pattern (bulk arrangement) based on the hedonic quality value of color, aroma, and appearance which tends to be higher (?3), the lowest percentage of damage (16.17%), and a more stable value of total soluble solids (13.32% brix-15.36%brix). text |
