Then, it would be a wasted resources if it is disposed sporadically. Therefore, theoretically it could be utilized as a carbohydrate substrate in solid substrate bioprocess technique for enzyme production. Pectinase is one of important enzymes which has commercial value. To day it is used commercially as biocatalyst to converting pectate or pectin compounds in the fruit juices to improves its filterability and yields. Moulds can produce microbial pectinase such as Aspergillus sp. and Rhizopus sp. The objective of this research is to investigate the capability of Aspergillus niger, Li in producing pectinase using banana peel (Gross Michel var.) as substrate in a packed bed bioreactor, aerobically. Me outcome were as follows : 1.The maximum enzyme activity of 4,12 mg reducing groupslmin/gram substrate obtained by the overripe peels compared to 2,98 mg reducing groups /min/gram substrate by the just ripe peels. < 2.The specific activities 64,27 and 53,54 mg reducing groups /min/mg of enzyme protein obtained by the overripe and just ripe peels, respectively. 3.The maximum activity of 4120 units per kg substrate and protein enzyme content of 0,641 kg/litre enzyme extract. 4.The highest enzyme activities observed in both peels associated with moisture content of 80 % by weight of substrate. <br /> text |
