World market demand for nutmeg commodities continues to increase every year. Still, nutmeg originating from Indonesia has a low price because the quality of nutmeg is low and is classified as Broken, Wormy, and Punky (BWP). Chemical analysis and extraction of fakfak nutmeg is needed to increase economic value. In this research, nutmeg fat oils was isolated from ABCD, rimpel, and BWP quality nutmeg seeds using the hot press method, analysis of chemical compounds from fakfak nutmeg fat oils using Gas Chromatography Mass Spectrometry (GC-MS), extraction of trimyristin using the reflux method, Ultrasound Assisted Extraction (UAE), maceration method, and eugenol extraction using the hydrodistillation method. The average yield of nutmeg fat oils is 30%, the three types of nutmeg fat oils contain the same chemical compounds, trimyristin, ?-terpinene, ????-phellandrene, safrole, ???? phellandrene, methyl eugenol, and eugenol. The best extraction of trimyristin is by the reflux method, at optimum conditions a yield of up to 70% is obtained. The extracted trimyristin has a melting point of 56-57?, Fourier Transform Infra-red (FTIR) signals C-H, O-C-O, and C=O at 2850-2950, 2350, and 1740-1750 cm-1 and Nuclear Magnetic Resonance (NMR) chemical shifts corresponding to the trimyristin reference.
