However, postharvest losses often occur in bananas due to their perishable characteristics. Postharvest losses can occur at various stages of postharvest handling, one of which is storage. Generally, storage at low temperatures can maintain the quality of postharvest products. However, tropical products have different sensitivities to low temperatures. Banana fruits can experience chilling injury if stored at 11-14oC. Storage at temperature is not enough to maintain banana quality, a combination of treatments is needed to maintain banana quality. In this study, bananas were stored in a Fruit Storage Chamber with TiO2-Mn at 20oC. TiO2 is a compound that can break down ethylene that causes ripening in bananas. The addition of Manganese decorations can reduce the band gap energy so that ethylene breakdown can occur more effectively. The use of FSC in this study was shown to maintain the quality of bananas up to day 5, but experienced faster ripening after that day, causing quality decline faster than control storage. The inhibition of ethylene rate due to TiO2-Mn only maintained the parameters of respiration rate, TTA, and TSS until day 5, while organoleptic was preferred by the panelists, as well as the vitamin C content which was more stable in control storage at the beginning of storage. text
