Fish is considered to be healthy; however as other animal products, consuming raw meat possibly leads to health risks, such as pathogenic bacteria or parasites. In this study, 11 samples of sushi are purchased from Japanese restaurants around subdistrict of Gubeng, Surabaya and are tested in terms of their Escherichia coli. The test is conducted using the method of Total Plate Count (TPC). The result shows that the largest number of colony is found in restaurant G of 1,1 x 107 CFU/ml, while the least number is found in restaurant B of 5,8 x 102 CFU/ml. Planting on Eosin Methylene Blue Agar shows green metallic sheen on 4 sushi samples of restaurant G, H, J, and K, while the other 7 samples show pink-colored colonies. Further identification is conducted by Gram staining procedure and biochemical test on E. coli-identified samples. The Gram staining procedure shows that E. coli is Gram negative bacteria as seen from its red-colored and rod-shaped colonies.
