Summary:Excellent natural antioxidant is consumed asan ingredient for the defense of the body against the danger of free radicals.One alternative of natural antioxidants source is Sargassum sp. (brown algae). Microencapsulation application technology can be used to obtain the source of natural antioxidants that are recommended for consumed by public. The presence of antioxidant compounds can be seen through DPPH test (1,1-diphenyl-2-picrylhydrazyl). This study aims to determine the concentration of gum Arabic and maltodextrin�s combination as the coating agent for ethanol extract of Sargassum sp. and to determine the effect of microencapsulation on it�s antioxidant activity. This research used combination of gum arab and maltodextrin as a wall. In this research, the content for gum arabic: maltodextrin(%) were 100:0, 75:25, 50:50, 25:75 and 0:100, respectively three times replications. Measurement of antioxidant activity are done by UV-Vis spectrophotometer with 517 nmwavelengths. Arresting activities against free radicals is defined as the inhibition percentage (IC50). The highest values of IC50for gum arabic: maltodextrin (100:0)% with the average was 10656.92 (ppm) and for gum arabic: maltodextrin (0:100)% had the lowest IC50values with an average 10116.25 (ppm). Dry extract of IC50values (without microencapsulation) was 1074.00 ppm and the comparator control IC50 value (ascorbic acid) was 50 ppm. DMRT which further test results indicate that gum arabic:maltodextrin (0:100)% is the best treatment to yield (20.60%), moisture content (4.85%), solids solubility (91.37%), and antioxidant activity (IC50= 10116.25 ppm).
