Summary: | Generally, Indonesian farmers store cassava in plastic bags or bamboo
baskets, and stacked it in room temperature. This method causes cassava has
direct contact with air, so the crops decay soon. The objectives of this research are
to extend shelf life of cassava by under-ground storage with various kinds of
based materials. This research also examines the changes of parameter
determining the quality of cassava during storage and determine the rate of change
of the quality of the model based on the parameters tested.
In this research cassava was stored in the soil pit with size of 40x40x50 cm
with 3 various kinds of bases and covered material. The materials are straw,
plastic followed by straw, and sand followed by straw. During the storage,
deterioration of the quality of cassava such as weight loss, hardness (texture),
physical appearance, moisture content and chemical composition observed every
5 days until the process is considered complete. Zero order and first order of
kinetic equation were used to analyzed data. As control, this research also
evaluate the general method that used by farmers to store cassava. At the final
stage of the evaluation, statistical analysis (Duncan Method) was used to
determine the effectiveness of the methods.
The results of this research show that the storage with hoarding method for
all treatments can extend the shelf life of cassava for at least 30 days. The smallest
rate of weight loss occured in third treatment with sand and straw. The smallest
rate of hardness occured in second treatment with plastic and straw. The smallest
rate of moisture content occured in plastic bags storage. The results are not
significantly different among the three treatments, but significantly different with
the control. The smallest rate of weight loss, hardness and moisture content are
k=0,0632 %/day, k=0,0144 %/day and k=0,0019 %/day respectively. During
storage, the chemical composition of cassava was decrease for both methods. In
general all of treatments can give a better effect to the cassava than the farmer�s
method. |
