Summary:The conventional filtration process of soybean extraction in tofu factories due to be performed manually is requiring great power and a long time. Centrifuge machine is machine which separates soybean extract from the dregs by using centrifugal force. The filtration of a fluid influenced by the magnitude of the rotation speed and the viscosity of the soybean porridge. This research was intended to get the rotational speed of centrifuge machine and soybean porridge viscosity that can gave large centrifuge capacity and produce a high yield of tofu. In this research, the rotational speed of the centrifuge machine and the soybean porridge viscosity were varied. To the soybean that has been milled and has become soybean porridge, more water was added for the variation of viscosity. Soybean porridge then was cooked until it boiled before was filtered with rotary speed variation. The filtration of centrifuge machine was performed with the variation of rotary speed. Observations were made against the flow rate of soybean porridge from cooktub, centrifuge machine capacity and tofu yield that was produced. The results showed that soybean porridge viscosity and centrifuge rotational speed gave a very significant influence on the centrifuge capacity and the yield of tofu. The highest centrifuge machine capacity i.e. 0.48 l/s and the highest tofu yield i.e. 177,5 % was obtained from the treatment with the lowest soybean porridge viscosity i.e. 1: 15 and the highest rotational speed of 710 rpm.
