Ria Millati, ST., MT. ETD Fruit is one of commercial agricultural products that highly produced during year. Ten percent of the global fruit production become wasted and have to be processed further to avoid environmental problems. Anaerobic digestion is considered as an alternative solution in treating the fruit waste, further it produces biogas that is one of energy sources. However, fruit contains flavor compounds that in recent research were proved to have inhibition and enhancement effects on anaerobic bacteria. Effect of γ-Decalactone, γ-Hexalactone and (-)Epicatechin on anaerobic digestion were investigated. Recent work has discovered that addition of 5 g/L of γ-Decalactone and (-)Epicatechin inhibited methane production and decreased the methane portion of anaerobic digester. The percent inhibitions for each were 93.29% and 96.05% respectively. In contrast, addition of 5 g/L of γ-Hexalactone increased 132.15% of methane production. Addition of 5 g/L of γ-Decalactone and (-)Epicatechin also affected the digester condition. It increased VFA concentration of digester that caused decrease in pH value. Due to the inhibition effect, those two flavor compounds were not consumed by bacteria. γ-Hexalactone performed as carbon source for bacteria. It was consumed by bacteria during digestion. Addition of 5 g/L of γ-Hexalactone kept a stability of VFA and pH value of digester. However, addition of 0.5 and 0.05 g/L of all those three flavor compounds did not have significant effect on methane production and digester condition.
