Summary:CPO contain high concentration of betacarotene (500-700) ppm. In the further processing of CPO, betacarotene is intentionally damaged by heating process because the consumer acceptance to pale and clear product is high so that need a method to recover betacarotene from CPO that did at low temperature. Method that was commonly used is fractination at low temperature (Hernawati, 2008). The important point of this method is crystal forming. But, studies of fractination at low temeperature to recover betacarotene with seedling is still limited, so we need to explore more about this potency. Crystal seeds size and addition percentage of crystal seeds would be variable in this research. Olein was mixed with Petroleum Eter in 1:4 (w/w) ratio. Then stearin crystal seeds in various size were added (1%, 2%, 3%, 4%, 5%). Then sample was fractionated at low. Then temperature was decreased step by step start at 20 o C, 15 o C, 4 o C. Analysis of betacarotene concentration used spechtrophotometer. The data obtained then were analyzed using oneway ANOVA with significance levels of 0.05%. Differentiation test was held using Duncan method. The results showed that crystal seeds size that used as variable in this research did not show significant different to betacarotene concentration. addition 1% and 5% of crystal seeds could recover betacarotene in highest concentration (938,47 ppm and 952,92 ppm). But the betacarotene concentration between addition 1% and 5% of crystal seeds was not significantly different.
