Summary: | Sidoarjo, crackers industrial centers in East Java, improvise making cassava crackers in export orientation, so every SME related have to maintain the quality and timeliness by increasing productivity of cassava crackers production process. The main problem faced, are at grater and roll press process, the machines used are not ergonomic yet, there are complaints and injuries when operate the machines, roller on both machines are not compatible for the materials, so it makes longer process and delay for the next process. Therefore, this research create new design of grater and roll press machine to overcome those problems and deliver better quality of product.
Research begins with few data retrievals, such as processing time, frequencies of injuries, the most poses of an operator while operating the machines as the basis for RULA and REBA. Machine design steps begin with creating need list of operator and SME, to be applied on the new design machines. Set the percentile of anthropometric data for machines dimensions by considering the need list description, also change both roller of machines with better material. Then making the machines with nearby mechanical workshop. Testing the machine is the next step to ensure that they can be well operated within work hours.Analyzed whether the machines have been able to answer the need list description, through comparing machines with the previous one. Products quality results tested by organoleptic questionnaires and measuring parameters of product results from each machine. The final step is doing economic analysis for the machines used in production process and make an economic feasibility for marketing the machines.
This research showed inprovement in the productivity of cassava crackers production process, by a decrease of RULA score from 6 to 3 using new design grater machine and from 6 to 2 using new design roll press machine, a decrease of REBA score from 9 to 3 using new design grater machine and from 7 to 3 using new design roll press machine. 46% efficiency of processing time at grater process and 70% at roll press process. 92% decrease in the frequency of injury using new design grater machine and 87.5% using new design roll press machine. It states new design machines are more efficient, more ergonomic, and safe to use. The organoleptic questioner and results of parameters product, stated that using new design machine, indicate improvements. This new design machines also makes an electricity cost saving and produce lifetime cost saving. In the term of economic feasibility, it also mark as a marketable product, because it earns 3.18 of B/C ratio, 214% of ROI, with PBP for 3 months, if we act as distributor which sells 27 unit with minimum profit Rp 1.097.857,143 each unit. |
