Summary:A lot of restaurants provide processed foods from ocean�s catch in Kuwaru Beach, but the facility layout and amount of the tools used to process the materials in the restaurant was limited and very simple. Research was done in Putra Bahari restaurant at Kuwaru Beach. Complaints often occurred from the visitor due to the duration of serving time. This research aims to make a good restaurant facility layout and can be made as guidelines for restaurants owner to arrange their own restaurant facility layout as well as accelerate the serving time to the visitors. Research begins with the made of working map and description of the initial layout. Time study was done to know the time needed in processing the material. Working map used to know the time needed in processing the material, the amount of material, tools used, and the material flow direction. Proposal layout adjusted considering the working map and restaurant owner�s wish. To know the comparison between the initial system and proposal system, the simulation conducted using promodel software. As the result of the research some modification obtained, those are separate the kitchen into fog and gas kitchen, using the empty place as presentation preparation place to make it closer with other work station, move the washing dishes place into the better lighting place, adding the visitor�s rest room. The simulation also shows that proposal system performance was better than initial system with the output 244 processed fish for proposal system and 212 processed fish for initial system. Time spend for each material processed was faster in the proposal system than initial system which is 57,06 minutes in the initial system into 52,06 minutes in the proposal system
