The sorption isotherm of JFL was determined by a static gravimetry method using saturated salt solutions at 25°C temperature, and the deterioration kinetic was examined by storing at 35, 40, and 45°C. The moisture sorption isotherm curves of JFL both developed from 100% pulp and 75% pulp + 25% dami were sigmoidal. The addition of dami was able to reduce aw (water activity), but on the other hand it increased browning. Brown color development during storage was judged as the most sensitive criteria by panelists to refuse the JFL. The browning development of JFL during storage followed zero orde reaction, with energy activation (Ea) = 26,37 kkal/mol and 23,43 kkal/mol for JFL from 100% pulp and JFL from 75% + 25% dami, respectively.
